Not only is this recipe delicious, it is also super easy to make and requires very few ingredients. Simply follow the recipe below to have the best cheesy ranch potatoes. You can use this as a side for any entree or if you are looking for healthy snacks, use a light ranch and not as much cheese. It still won’t be the best thing for you to munch on, but it will be somewhat better than if you used regular ranch or a pound of cheese. Also, if you are feeling adventurous, you can always add some bacon or chicken to add a little more flavor.
- potatoes, diced (peeled, not peeled, russet, reds, whatever)
- salt & pepper (or whatever other seasoning you like, taco seasoning, garlic herb, etc)
- ranch dressing, to taste
- shredded cheese of your choice, to taste
Preheat oven to 400 degrees.
Place the diced potatoes in a baking dish. Dot with a few pieces of butter. Season with salt & pepper, or whatever other seasoning you like. Cover with aluminum foil, and bake for 50-60 minutes, until potatoes are fork tender.
Add ranch dressing & shredded cheese to taste. Cook in the oven for another 3-5 minutes, until cheese is melted & ranch is piping hot.
